The Limniona Wild Fermented by Liappis Winery is an exceptional expression of the revival of the ancient Limniona grape variety, native to Thessaly. This variety, which was on the verge of extinction, has made a remarkable comeback to the Greek wine scene, offering wines with unique character and complexity.
Tasting Characteristics
Deep ruby color and elegant aromas of violet, red fruits such as rasberry and sour cherry, complemented by spicy notes. On the palate, it exhibits a full body, rounded tanins, crisp acidity, and a lingering finish.

Vineyard
Liappis Winery is situated at the foothills of Mount Narthakio, in the region of ancient Phthia. Its vineyards, located at an altitude of 380 meters, are cultivated organically, without irrigation or fertilization, with a yield of approximately 600 kilograms per stremma. This particular Limniona comes from the "Merias" vineyard, with East-West orientation and a 6% slope.
Vinification - Maturation
Hand-harvested grapes carefully selected in small crates, with meticulous sorting process in two stages. The vinification follows traditional methods. Spotaneous fermentation takes place in open barrels, without the use of enological additives, and the cap is manually punched down (pigeage). The wine ages in old 500-liter oak barels for 12 months. It is bottled unfiltered and unstabilized, continuing to improve for at least 10 years from harvest. Any sediment in the bottle is normal.

It pairs beautifully with red meats, bushmeat, pasta with minced meat or red sauces, or cold cuts.
