The best cocktails are made with White Rum! It is divided into two main categories, Aged and Agricole.
White rum is colorless, either because it is unaged or because it has been filtered after being slightly aged. Its taste is characterized by delicacy and its aromas are reminiscent of tropical regions.
Bacardi, Diplomatico, Plantation (now Planteray) and Pampero are the most popular.
White rum can be enjoyed straight, especially if it is slightly aged. However, the fact that it is inextricably linked to the world of cocktails proves its enormous potential to participate in them.
If white rum comes from molasses, elements of tropical fruits and vanilla dominate the flavor. However, if it comes from sugar cane juice (ie. if it is an Agricole rum), then elements of grass and wet soil dominate the taste. The aromatic profile of white rum includes notes of green apple, coconut and white pepper.
The purity and botanical character of Agricole rum are ideal traits for successful mixing. On the other hand, the sweetness and complexity of typical white rum offers an interesting dimension to the cocktails in which it participates.
The tropical characteristics of rum are enriched by elements of spices, wood, tobacco and vanilla. Sometimes, the fruity dimension of the drink becomes even more complex.
A temperature of 10°C is considered ideal for unaged rum. Its aged version is usually served at a slightly higher temperature, which does not exceed 15°C.
It all starts with sugar cane. The plants are harvested, and their sugar-rich sap is used to produce granulated sugar. A by-product of this process is molasses, a material also rich in sugars. Molasses undergo fermentation and the product is distilled into rum. Alternatively, sugarcane juice is fermented directly into an alcoholic product, which is then distilled into rum. In this case, the spirit is called Agricole rum.
