The trade name "Fortaleza" may have existed since 2005, but the tradition of the distillery in Jalisco, Mexico, goes back a century and a half. Its founders are largely responsible for the prevalence of blue agave, as a raw material for high-quality tequila, but also for the use of steam when processing the plant. In the mid-70s, the distillery ceased operations. It came back stronger in the late 90s and to this day is a benchmark in the production of premium tequila.
