Let's avoid a misunderstanding: spiced rum is not necessarily spicy. Whatever the enrichment, it results in a spiced or flavored rum. The extra "touch" comes from a wide range of products, such as spices, fruits, flowers and roots. In the majority of cases, the rum undergoing the addition is aged.
Taste and aroma depend on the enrichment materials. Spices, such as cinnamon, nutmeg, pepper and cloves, usually have the first word. Often, however, citrus peels, ginger, pineapple or coconut dominate nose and mouth.
As a general rule, spiced rum from Jamaica has a stronger character than its eastern Caribbean counterpart. However, the choices of each manufacturer are more important.
Rum with a touch of spices is more associated with winter situations, while rum flavored with fruits and flowers has a more summer character. Of course, it's all a matter of preference and mood. Nothing is forced and nothing is forbidden.
Fruit-flavored rums, such as Captain Morgan Tiki, pair wonderfully with fruit salads. A rum with strong pepper character, such as Chairman's Reserve, perfectly accompanies grilled meat and Creole cuisine. Sweets based on chocolate, vanilla, caramel and apple match with a rum with corresponding character. Dead Man's Fingers Coffee is a good suggestion.
Store at room temperature, away from sunlight. Make sure the cap is carefully fitted, if the bottle has been opened.
Spiced rum with a fruity base is recommended to be enjoyed with ice. Spiced rum with a spicy base can be consumed with or without ice.
A great suggestion is the Bomber. Mix white rum, spiced rum (eg. Canerock) and lime juice, in a ratio of 2:2:1. Add ginger beer in an amount equal to the sum of the amounts of the other three ingredients. You can adjust the proportion of white and spiced rum, changing the final taste result. Bahama Mama, on the other hand, is based on coconut-flavored rum. Along with overproof rum, pineapple juice, lemon juice and grenadine syrup, it will create the ideal cocktail for summer sunsets.
