For over 250 years, the name Finsbury Distilled London Dry Gin has become synonymous with one of Britain's finest and most popular beverages, gaining international recognition. The Finsbury Distillery was founded in London by Joseph Bishop, in 1740. The descendants of the Bishop family faithfully kept the tradition they inherited, remaining the only owners of the distillery, until the 20th century.
Tasting Characteristics
Nose with aromas of lemon, juniper and coriander. Oily mouth, with citrus and spice flavors being quite intense. The finish is slightly bitter with citrus elements.
The process
Produced by the same elaborate method, in traditional, copper pots over 100 years old, using juniper berries, exotic fruits and aromatic herbs. The recipe created by Joseph Bishop remains a secret and is used unchanged to create one of the finest and softest expressions of the style, known as London Dry Gin. The traditionally elaborate method, known as the "single-batch" is applied, the result of which is a superior quality gin with a really distinct character: First, the juniper berries, the fruits and aromatic herbs are left, for many hours before distillation, to be mixed with high quality alcohol in the copper distiller, so as to release their precious aromas. A 7-hour distillation follows. The distillate of every batch is checked by the Master Distiller, to ensure that only the best parts are used and bottled.
