Vineyard
The vineyards of Cabernet Franc are located in the areas Aravonitsa and Petsakoi of mountainous Aegialia. The northern report of these slopes and the altitude develop him more character of Cabernet Franc. The vineyard of Roditis which "turns red" is located in the mountains of Ziria. These are poor soils ideal mechanical composition, draining well. All the cultivation care is done with hands and odds do not exceed 60hl / ha.
Vinification – Maturation
The harvest is done by hand in small crates. 2019 took place on September 15 in exceptional climatic conditions. The grapes arrived at the winery healthy and of excellent maturity. After sorting of the raw material and slight breaking of the grapes, followed by joint pre-fermentation extraction of the two varieties at 8 - 10 ° C for a few hours, until the desired color and phenolic potential is achieved. The precursor was then removed from the press followed by static extraction and slow fermentation at low temperatures (12 - 15°C). After the end of the fermentation, the wine matured with its wine sludge in the tank for about 3 months. At all stages of winemaking, from the receipt of the grapes to the bottling, the natural flow of gravity is utilized.
Harmony
It pairs well with fresh salads, pies and tarts, mushrooms, risotto, pasta, light pizzas, poultry, seafood and sushi.
