In 1846, Hector Henderson chose a remote and beautiful location to build his distillery, on the shores of the Sound of Islay overlooking the Paps of Jura. They continue the traditional methods of malting whiskey to make the distinctive Caol Ila malt quality. The barley that used locally in Port Ellen and the pure spring water, rises from limestone in the nearby Loch nam Burn and then falls into the sea at Caol Ila.
