Tasting Characteristics
Light golden-green colour. Crystal clear aromas of minerals and salt along with subtle aromas of green apple, acacia and pear. Aromas of fresh ripe exotic fruits, but also of lemon peel. Correspondingly aromatic and rich in the mouth, interesting and lively, thanks to the acidity and a pleasant sense of minerality. Lasting, aromatic aftertaste.
Variety Composition
Chardonnay 100%
Vineyard
Asprokampos: Vineyards in the Stymfalia plateau, in deep, clayey, alkaline soils, with ample calcium carbonate. The yield does not exceed 900 kg/acre. The climate of the area is characterised by cold winters, with plenty of rain and snow, cool springs and dry summers, with high temperatures during the day and cool nights.
Vinification – Maturation
Mild pressing of carefully selected grapes and alcoholic fermentation of the must in a small, stainless steel tank, using selected yeasts at low temperature. After a brief static clarification at the end of the fermentation, the new wine stays for a few days with the ‘light’ lees at a low temperature.
Serving Suggestions
