Tasting Characteristics

Bright white-yellow color. Refined and complex aroma characterized by fresh herbs, white-fleshed peach while the minerality of the variety blends perfectly harmoniously with the woody notes and aromas of oak. Full-bodied with creamy texture on the palate, crisp acidity with a soft finish aftertaste of oak that lingers on.

Vineyards

Selection of Vidiano grapes from higher altitude areas of Crete on the outskirts of Dafna. A combination of berry testing and analytical data to determine the time of harvest in each vineyard. Harvested at the lowest possible temperatures of the day. Strict manual sorting during receipt.

Vinnification - Maturation

Typical white vinification with wholebunch pressing. Alcoholic fermentation at controlled temperatures using selected yeast strains. Aging of the wine in tank and in oak barrels with stirring of the fine lees after the end of fermentation until bottling.

Harmony

It pairs perfectly with large fish, seafood, grilled meats and light pasta dishes.
