Lively rosy color. Nose with intense aromas of red fruits, such as cherry and strawberry, and freshly cut mushrooms. Exuberant mouth, with spicy notes. The bubbles provide a cool and youthful character.

Vineyard
Vineyards of southwest exposure, on slopes with limestone soil, at an altitude of 550 - 600 meters.
Vinification – Maturation
Co-vinification of the three native Epirotian varieties. After the grapes are pressed, the must remains with the grapes for a few hours, at a low temperature. The first fermentation takes place in cooled stainless steel tanks, to produce the base wine.The second fermentation takes place in autoclaved stainless tanks (methode Charmat), under controlled conditions, to induce natural foaming. Aging on the lees for about three months adds extra complexity and structure.

Ideal combination with white and red meat, seafood, pasta, risotto, traditional Epirοtic pies and sweets.
