Tasting Characteristics
A gastronomic rose with a rich flavor and aroma, complex and unique. The color is a bright, fine, soft coral. The nose is dominated by red fruits, cherry, strawberry, a hint of lemon, citrus, grapefruit, white flowers, honey, some violet and a hint of minerality. The mouth is full of nerve and acidity, oily, cool, complex, multi-layered, while the aromas of the mouth closely follow those of the nose with the dominant presence of lemon and citrus fruits. The aftertaste is long and complex.

Vinification – Maturation
Two Greek varieties, four different ways of vinification. Assyrtiko ferments in new 400 liter oak barrels as well as in 250 liter ceramic amphorae along with its skin for 4 months. Agiorgitiko matures on its lees in a stainless steel tank and in a modern concrete egg-shaped tank for 4 months as well.
Harmony
It pairs well with seafood pasta, oven-roasted poultry, mixed vegetable salads, fried fish.
