Tasting Characteristics
It has a deep ruby color with violet highlights. The nose is intense and complex, with aromas of red fruits such as strawberry, sour cherry, red currant. Some hints of tomato, lavender, vanilla, marjoram, nutmeg, green pepper, rose and tea complete the special ensemble. In the mouth it has full body, intense but ripe tannins and crisp acidity. Juicy cherry, helmet, strawberry, sour cherry, vanilla, cinnamon, pepper, cocoa, tea, lavender, dried rosemary, olive leaf, tomato paste and violet fill the mouth with every sip.

Vineyard
"Kaiafas" is a vineyard planted 44 years ago next to the village of Trilofos. At an altitude of 180 meters and limestone soils. The warm climate of the area is moderated by sea air currents that reach the area unimpeded but also by the cold currents that descend from Mount Vermio at different stages of the day. The large temperature range and the average temperature remain at low levels for the altitude.
Vinification - Aging
The grapes are 20% "whole cluster" and the fermentation is carried out with indigenous yeasts. The extraction lasts for 40 days. Aging took place in second-hand 500 liter French barrels for 24 months.
Tasty Combinations
It can match with veal Bourguignon, kebabs, stewed meats, well-cooked and peppered fillets.
