Tasting Characteristics

On the nose it has aromas of cooked agave, herbs, citrus fruits, spices, honey, wood and vanilla. In the mouth it is clean, with flavours of citrus fruits, cinnamon, wood and roasted nuts.

The process

Produced traditionally, in ovens made of sand, bricks, stone and wood. The process lasts for about 24 hours, with an additional 24 hours for cooling. The agave used comes from proprietary acres. The Jimadores, cultivators of agave, select the ideal plants, with the highest sugar levels, after maturation for 7 to 8 years. The water used comes from natural springs and is rich in minerals.
