Every Varvayianni oyzo is created by 100% distillation, with a slow process, in small coper alambic, with the exellent use of anise and other first materials. The recipe of course includes the addition of Plomari's crystal waters and the experience of a century that runs in Varvayianni family. Slow and with patience just like when Eustathios Varvayiannis made his first oyzo.
