Dimitris Giannatsis, from Mikra Asia, arrived in the Plomari when the Ottoman Empire had started to lose it's momentum. With him, he brought valuable recipes from the East. He made them while using the first materils of high quality that he found in Lesvos: anis from Lisvori, water from the chimera of Sedouna and fennel throm the village's mountains. He collaborated with the hard working locals, creating this pure drink, which up to this day, is made with the same care.
