Tasting Characteristics
Bouquet rich in aromas of exotic fruits, grapefruit, passion fruit, peach and honeysuckle. With an intense taste, delicate, cool, balanced, with notes of exotic fruits but also an impressive predominance of the lychee fruit in the aftertaste. A cool acidity combined with a creamy volume adds to the wine a great structure, able to satisfy all culinary arrangements.
Variety Composition
Malagouzia 50% – Sauvignon Blanc 30% – Assyrtiko 20%
Vineyard
Malagouzia is undoubtedly one of the most popular white varieties. Selected vineyards with ideal conditions of sunshine and climate, help the perfect ripening of the grapes. Sauvignon Blanc is one of the most popular varieties around the world. The vineyards are located at an altitude of 630 meters where a Sauvignon Blanc is produced with an aromatic and intense character, dominated by notes of citrus fruits and passion fruit giving a sense of freshness. Asyrtiko is one of the most famous white varieties. We choose vineyards with a warm and dry climate, in these vineyards Asyrtiko retains its fresh character and presents more intense primary fruit aromas.
Vinification – Maturation
Distribution of the precursor of each variety separately, pre-fermentation disgorgement, vaccination with selected doughs suitable for each variety, controlled fermentation in stainless steel cooling tanks at 16-17 oC. Mixing of fermented wines.
Harmony
It is successfully combined with meats, with fish and seafood, with pasta or cheeses.
